Assuming I knew how to solder, would it be safe to wire it to a UK 3 pin cable/plug? Where would the third wire go, if anywhere?

It's in a plastic box, so unless there's a ground contact on the PCB (which there won't be if it was designed for a 2 prong plug), there's no need to connect an earth.
If it came with a UK plug it'd be one of those with a plastic earth prong.

No, just cut off the EU plug and put a UK one on the cable - no soldering needed.

It doesn't come with a cable though -that cable is one someone has added after market. It's got a 2 prong plug baked into the back.
Though actually looking at this video it seems to be plastic so I wonder if I can figure something out: https://www.youtube.com/watch?v=9LWbrKwZ-qA&t=312s
In any event, I think getting one, seeing in person and returning if not right is prob best course of action.

Looks like a German-style Schuko plug.
You need something like this
