Another shout-out for Greece for relaxed beach holidays. You do need to get away from the mass tourism as ectoplasmosis describes, but then you get your little money's worth. Off season also helps majorly.
If you're so inclined you can also do day trips to the plethora of UNESCO world heritage sites everywhere.
Or do Athens for two days, then get a (quick) ferry out to a quiet island.
