  • I use a stainless steel teppanyaki pan. I prefer to grind up the meat from short ribs as it has a decent fat content so no oil is needed. Medium temperature for conventional burgers so they are cooked properly but with a hint of pink, higher temps for smash burgers as they are so much thinner.

  • cast iron pan, hot, 2 to 2.5 mins a side.

  • I used to use a frying pan with a lid. Stopped the oil spattering and helped to cook the inside more evenly.

    Now I use an air fryer on the grill setting as it's much easier.
