Late to the party but just upgraded from sram 2x11 to GRX 2x12. Super smooth, super quiet, super precise once dialled in, one or two finger shifting and braking from the hoods (even on the front derailleur).
The shape feels more square than SRAM, and I haven’t found a sweet spot for comfort in it yet.
Have had 12 speed 105 on my winter steel bike for last month and echo everything here. The last mechanical Shimano group I've had from brand new was 6700 and that feels absolutely agricultural in comparison.
