Whatever the vehicle is needs to be able to make it to Briancon, onto Morzine, back to Briancon, then back to the UK - plus running around the South of France and the North of Italy.
I imagine a kombi would be on a transporter halfway through the first leg of that.

Are you talking about some crappy old T4 or something?A modern transporter is gonna be way more reliable than some 10 year old v8 Mercedes Exec-wagon. You could keep it for a year, put ~15k miles on it and still sell it for pretty much what you paid for it.
Went all around Europe in my old T5.1 with no issues for two years (until I crashed it). New T6 DSG is even better. Euro 6 too so no European city ULEZ ban issues. Nothing beats captains seats and arm rests for long distance driving.
But whatever..... You do you. 🫡

Kombi/Combi Is just what VW call any van that has combination of seats and load space in the back (as opposed to a panel van). Ford call it Crew Cab.
Yes, the initial outlay is not a small amount by any means, but it would probably end up costing you less overall. The thing with vans is they hold their value exceptionally well (especially Transporters), so it being too rich is a moot point, as you'll get pretty much all you put into it back if sold on within a year (if you have access to funds/finance in the first place, obvs). If desirable spec you may even see a profit....... Unless you write it off of course. Insurers do not accept that high spec vans don't depreciate like cars. Payouts are often far less than cost to replace like for like - I found this out the hard way.
Ford Transit Custom Crew Cab is similar to Transporter Sportline/Highline without the VW tax.

If you could stomach reorienting your luggage you could look at a VW Caddy Maxi.
You could even pop some A8 front seats in to help cope with the long drives around southern Europe.
A glass windowed one will get broken into less when left outside your mates house. Being a VW it will allow you to modify it to suit your needs.

New T7 transporter is the same as ford transit. Think transit is already out and VW this year.

Buying a brand new van is terrible idea unless you are a business, as VAT will be payable on top of the OTR price. This is one of the reasons the private market for second hand high spec vans with VAT already paid is so strong.
Also, T7 is pretty ugly from what ive seen. I'm not particularly keen on the front end update of T6.1's either TBH - Which is why I opted for low milleage T6.

Even though I don't pay vat I am a few zeros short for any nice vans.
I just checked because I found the last model transit really good when I rented one, it's wider than a T5 so nicer for big stuff.

But why is that particular bag configuration set in stone? Is the bike bag too weak? But why does that prevent it being lain on its side on top of the other bags?
I think clear windowed combi max full fills all the requirements, without a £££s outlay. Change my mind.
