WTD. Grips, rear rack, panniers?

putting the finishing touches to a.build.and am after:

Grips (ideally Oury), probably.black tbh
a rear rack, fairly low profile.ideally.and would sit closer.to.a.700c tyre
Panniers? For the right price, for the above mentioned rack
Bag for wold 137, ideally roll top?
