Not familiar with X30 and X50 steels, but at that price point I think you shouldn't be trying whetstones, and should instead use a honing steel and one of those pull through sharpeners which take 2seconds and not 15 minutes.
- You're really not going to have any fun trying to run those steels over whetstones because of the way they (don't) abrade and the size of carbides in the steel and
- The main advantage of whetstones - sharpens really hard stuff, wears your blade down less and gets your blades really sharp - don't apply to knives made of softer stainless steel which are still going to last for plenty long in home use with pull through sharpening once every few weeks and honing in between before you have to replace them, and don't get that sharp (or hold their edge long) anyway.

Haven’t been able to find my everyday knife for a while now(it’ll turn up, it always does) but found my opinel again instead.
Was given this when I joined the Cubs so guess I’ve had it about 30yrs. I have no idea when I reshaped the handle or how it got singed but feels good in the hand. It’s a No.6 so pretty small but I’m sure as a kid it would have been full sized to me.
The blade is pretty thin as it used to get sharpened on an old oil stone.
It’s prepped game, been my trusty work knife for nearly my whole adult life and now going to live in the shed at the allotment where it will continue to be mistreated and still perform flawlessly. Might drill the handle and put a bright cord on it as I’ll definitely lose it in the mud.
Might treat myself to a new one.

Any tips for getting the most out of the Blenheim Forge sharpening class?
Saw it recommended on this thread and I'm going on Saturday. I'm new to sharpening having watched a few videos and have had a go at sharpening the basic knives we have.

Not especially. One thing I found was that it wasn't until after I'd done the class and I was watching knife sharpening videos that I had a 'Oh! that's what he was talking about' light bulb moment. But that could be to do with the tutor's delivery, the student's ability to absorb information, or a combination of the two.

My oldest knife was given to me when I was 12, in 1972 and it is a Choix Opinel. I later used various ICI Woodfinish stains and lacquers, because I could. I was wondering when did they drop the Choix name?

Any recommendations for a nice, classic, wooden cheeked folding knife? Want something crafty for apples and cheese.

I have a Nihon x50 Nakiri and think it's great. I got it when it was super cheap, but think at £30 it would still be a fair price. The handle feels nice in the hand. Mine was raw so I put some tinted Danish oil on to seal it.
