Those Sabatier are solid knives. The ones you've selected as an upgrade are quite specific styles with an intended use - eg the Nakiri is meant for veg.
This probably isn't what you want to hear, but if you're a beginner there's no point in buying more than what you have. Learning to sharpen them properly (or just sending them to be sharped) will give you the best return.
In terms of sharpening, I like the fake lansky sets from Aliexpress then regular top up with a steel.

I bought a Nihon x50 when they were on sale for a tenner and am really happy with it after probably a year or so of use. It looks pretty nice, is a nice shape to use and is really easy to keep sharp with my very limited whetstone skills. They seem to be about £50 now which I'm not sure I'd pay but it might be worth looking at the rest of their line to see if there are any bargains to be had.
Loving the thread and some very beautiful knives here. Hoping for a bit of beginner advice please?
Currently have a set of X30 Judge Sabatier knives, here but looking for an upgrade.
Considering 2 of the 3 knives in the pic (+ the X30 Santoku), but happy to consider alternatives if worth the upgrade.
Oh and any advice for a cheap sharpening stone would be great as my sharpening steel technique isn't the best. Cheers!
