Sharpening on a wetstone will get your knife quite sharp. No skills required.

I always thought my thumb was average sized. I think since it was my higonokami, my ring finger was not on the blade and got caught between the knife and the stone. Great excuse to use the finger bob though. Marvellous invention.

Dropped off two of my SAKs to the flagship while I was in town yesterday. Can’t say my customer experience was as glowing and wonderful as others have made out in the past. In fact, felt totally lacking.
One of the two could have been done in-store if they had stock levels sorted, but now it’ll take up to 4 months for a simple part. They didn’t put any effort in so sod it, it can go back to Switzerland for a holiday.

Slipped on a piece of stale bread and needed stitches in Portugal a couple years ago. It was the cheapest pocket knife from a random wares store in Porto. I daren’t carry that knife after the Camino. Can’t be trusted.
TL/DR didn’t even notice for a moment then grabbed my leg closed. Sharp knife is sharp.
Heal up.

Loving the thread and some very beautiful knives here. Hoping for a bit of beginner advice please?
Currently have a set of X30 Judge Sabatier knives, here but looking for an upgrade.
Considering 2 of the 3 knives in the pic (+ the X30 Santoku), but happy to consider alternatives if worth the upgrade.
Oh and any advice for a cheap sharpening stone would be great as my sharpening steel technique isn't the best. Cheers!

Those Sabatier are solid knives. The ones you've selected as an upgrade are quite specific styles with an intended use - eg the Nakiri is meant for veg.
This probably isn't what you want to hear, but if you're a beginner there's no point in buying more than what you have. Learning to sharpen them properly (or just sending them to be sharped) will give you the best return.
In terms of sharpening, I like the fake lansky sets from Aliexpress then regular top up with a steel.

Depending on where you are located Blenheim Forge in Peckham do a knife sharpening class. £50.00 for two hours with six of you in the class. I've always considered myself adept at sharpening knives, but having attended the class my knives are at a totally new level of sharpness.

Totally agree with this from a function point of view. They will still be kept + properly sharpened but often get used by others so I can't keep them as sharp as I'd like.
I really just wanted something for myself that I love the look of with a slightly comfier handle that reminds me that I used to enjoy cooking / when I did a small amount of work as a chef when younger. So aesthetics, handle +minor upgrades is the aim (the handles of the judge set get uncomfortable if I use them for a while). I'd love a Damascus style one but unsure if they're worth the price increase.
I often batch cook so the naikiri was to chop kilos of veg to make chili etc. and a nice looking chef's knife to use for everything else.
Appreciate the sharpening recommendation + classes. I'll take a look. Would love a decent victorionox but aiming for a decent handle which puts them out of my price range for now.

I bought a Nihon x50 when they were on sale for a tenner and am really happy with it after probably a year or so of use. It looks pretty nice, is a nice shape to use and is really easy to keep sharp with my very limited whetstone skills. They seem to be about £50 now which I'm not sure I'd pay but it might be worth looking at the rest of their line to see if there are any bargains to be had.
Any opinions on one of these?
