Yes they can be dissembled, cleaned, and reassembled... but Campag don't sell the parts separately. IME the ratchet disks eventually wear, and that's all that needs to be replaced. I've mostly got spare parts from cannibalising others that have broken levers etc.
Do note if doing a post-2011 lever that they changed the order of cone spring washers from what is shown in the video, adding one more, so make sure you keep the bits in the right order.
