Very much thinking aloud, but I wonder if there's a way to have an illuminated glass splashback behind the hob.
The thing that's always shit is cleaning grease off things round the hob, so that would be one of my main considerations.

what about one of those IRSTA ikea panel led’s that are 600 width to go under a cabinet? not sure if they are shallow enough but they are slimline so it fixed under the shelf will look ok especially as it’s a pure lit rectangle and not some strip with dotted led’s, it will give a better softer illumination from a larger surface area
