  • Cooking lunch for 12 on Sunday.
    Don't want to do a roast. Don't want to do a big pan of mince.

    Any ideas...?

    I was thinking maybe homemade pizzas and salady bits.

    Any other options?

  • I made a carbonara last night and it was super tasty (humble brag)

    500g pasta
    130g diced pancetta
    4 eggs
    90g parmasan
    Oil
    Butter
    Salt
    Pepper

    Boil a large pan of water and cook the pasta.
    In a frypan, put butter and oil (about 3tbsp of each) heat and add the pancetta, cook until crispy (about 5mins or so) turn off the heat
    Grate the cheese, beat the eggs, add about half the cheese to the eggs and add salt/ pepper.

    Once the pasta is cooked, drain it and put back in the same pan, pour the oily buttery pancetta in with the pasta, mix it a little, then pour the egg mix in, stir it up for maybe 30seconds, the heat from the pasta will cook the eggs enough.
    Add the rest of the cheese to the top and eat.

    Made enough for 2 dinners and 3 lunches.

  • I'm not going to get all carbonara purist (I mean - guanciale & pecorino romano aren't as easy to come by, and you didn't add anything like garlic or peas), but why add any extra fat, when even pancetta is almost 50% fat?

    Anyway. I love a good carbonara. Such a good return on such little effort.

  • Pecorino was the intention, but Tesco failed me.

    Next go will maybe include edamame and possibly some fresh chilli

  • Pan fry two leg of chicken. Boil potatoes. Remove leg of chicken. Roast potatoes in broth. Remove potatoes. Add olives and a liberal amount of ginger umami paste with some water. Stir on medium high heat. Serve with a half decent pinot noir.
