They were formerly structural beams
Presumably not pressure treated? If so, it might mean you need to be careful as to how you finish them.

Do you have any renders/pictures of the kitchen? It's a similar size and shape to ours which needs some thought due to awkward qty/location of wall openings...
Currently the fridge (big double) and sink is in the utility room, along with most dry goods. Initial plan is to move the dishwasher out there too, although I think that is potentially more annoying than the fridge.
If there's room, a mobile island with wheels is on the cards.Initial plan renders attached and a 360 here

Personally I'd move the hob next to the ovens and get a small sink in where the hob is now.

No offence, but this doesn't sound good. It reads like you are spending money to make a kitchen that's worse than the one you have.
I know a big fridge is nice, but if you can't make it work then sell it and get a different one.
You need a sink in a kitchen. A dishwasher in another room is such a faff - even if you have plate storage in the same room.

Fridge in another room is sort of ok, like a pantry, but no sink in the actual kitchen is crazy.
Sounds nuts but that would genuinely devalue your house as 99% of people would think, agh love this house but I'd need to fit a sink.

Fridge in the utility is fine, we had a massive fridge/freezer and it was just in easier in the utility. Sink in another room is bonkers though, think how often you wash your hands, need water for stuff and just throw stuff in there whilst you're cooking.

can dig out a few more if there are any specific bits you want to look at.
we put the washing machine + boiler and a couple of cupboards in the small utility space shown on the plan which works pretty well although has become a bit of a dumping ground for my tools and stuff until i sort out the garden shed (project for spring)
the island isn't fixed down either which gives the option to open up the entire floor space, but we've not needed to do that yet.
agree with the other comments re: sink. there's no way i'd contemplate not having a sink in the kitchen

how much to supply and install one 3m shelf in birch ply of a similar thickness to this (24mm?)? know birch ply is stupidly expensive these days but seems like a simple job so not sure how much it should cost a joiner to do

Not 100% sure but might help to know maple is a more reasonable alternative to Birch nowadays
Also looks like two 18mm sheets sandwiched rather than one 25mm

Replying to this version of no-sink-meltdown!
We don’t do any washing up in the kitchen, the existing sink is mostly for the cat to sit in (3d scans attached). I’m considering removing it now to test the practicality.
The existing layout is shit, the lighting isn’t good for cooking or eating, the extraction is non-existent, the worktop is gross and the cabinets are falling apart - it needs doing one way or another.
Other things Things to solve with new layout:
- extraction/moisture control. Existing hood is against interior wall and non-ducted.
- Plumbing is on exterior wall only.
- Single lighting circuit
- Slug ingress

So you never use the sink to wash your hands whilst cooking? Never fill pans, empty pans into the sink or put in other general gubbins? You must do some zen minimalist cooking.
Think about when you want to clean the kitchen? There are many things that are individual taste but not having a sink in the kitchen is a bloody terrible idea.
