I think that only works with dry ice blasting

I suspect the main mechanism is saponification of oily contamination due to the alkaline solution.

Oily contamination you would include whatever black substance the slow roasted goulash had solidified into?

You need barkeepers friend, I don't know how it works but I know it will never take hours

If it's black, it's probably got a fair bit of pyrolised carbohydrate and protein in the mix, but bound with polymerised fats. It's a primitive carbon fibre composite 🙂
