The first one you mentioned sounds best out of the three.
Given this is your / your OH's first time caring for a cat I'd suggest getting one that isn't too sick to be frank - I think it's wonderful that you're even considering getting a cat with health issues in the first place, but an animal needing daily meds / one that has severe issues will most likely be too much.

As a first cat, I'd go with FIV cat out of the 3.
My logic is it will be normalish, 2 will require lots of work along with special diet, possible injections and 3 is an cat that will need a lot of attention and work to socialise that I don't know you have the time or skill as I believe it would be quite specialised.
Remember you are doing more than most to help kitty kind. Photos when they arrive.
CHAT have got in touch with a couple of cats who they think would be suitable for us.
One cat with FIV+, deaf in one ear, Horners Syndrome which is something to do with his eyes (not really noticeable) and has some balance/stability issues.

Cat with severe trauma/fear issues, apparently when they brought here in she'd just wet herself when they were trying to socialise. Apparently improved a lot, but is on a sensitivity diet...
Think #2 is out of the question, as sweet as he looks I'm not sure either me or my OH could deal with it
