  • I got this bread knife last week and finding it surprisingly difficult to slice a sourdough loaf. It goes through the top section ok, but then I have to give it some real welly to cut the bottom crust. Like the same as my POC cheapo one, maybe even worse.

  • I think most bread knives struggle with the bottom, I lift the loaf a little at an angle so it isn't trying to get through the whole crust at once.

  • This is why if it’s a sourdough boule a lot of people cut it in half and then put the flat open face onto the board and then cut their slices. There is then the issue that you have two open faces ob one half of the loaf and one open face on the other half of the loaf


    Doesn’t work with a batarde, so with them I cut most of the way through and then rotate the loaf.

  • That's why I think bread knives that have a curve at the tip like the Opinel one are often better. With a shallow handle angle like on that procook one, you will be trying to get through the bottom crust just with the very tip of the knife which doesn't have any serrations and won't stay sharp for very long.

  • Yeah I think I’ll have to do the lift and slice, it usually gives it a rough finish so was hoping a shiny new knife would just do it flat.
    The Nakiri is really nice, hugely enjoyable chopping veg again!

    I sometimes wonder how much kitchen knife fandom is linked to the weapon aspect. Does anyone understand the psychology? And what about the gender balance? Are women as interested in the minutiae of knife design and construction?

    I make sourdough and it cuts it like it's butter. Well worth the money - especially as it was a gift.

    Should say I have the mega bucks one Les Forgés 1890.

  • A big generalisation, but boys like collecting stuff.

    Football stickers, stamps, coins, trading cards, watches, memorabilia, Warhammer, knives, guns, books, cameras, lenses, books, consoles, pens, trainers, tools among many other things.
    There is no logical reason why I should own 10 swiss army knives, but I do.

    Not to say that girls/women don't also, but largely the collectible item market is seems geared towards men.

    Regarding the sexy killing tool comment, I wonder how many 'meat is murder' vegans are Japanese carbon steel, or hunting knife/EDC knife collectors. Of course, vegans are allowed nice things too, I get that a sashimi yanagiba knife might not be 'knife pron' if you're that way inclined.

    I have a cheap mercer 10 inch one, which works ok, but its a bit too long to fit on my magnetic rack, so usually lies hidden in a drawer. I also don't really like using it.

    Following from @nick_h.'s post, my wife can't quite understand why I would want a different bread knife when the one I have now works fine.

    My brother is devoted to 'his' block full of Global knives, although he has little interest in cooking. His wife tolerates this because when it's time to chop stuff she can expect some assistance. The rest of the time he is one of the worst husbands at sharing the household chores. But his knife love can come at a high price - the things are so sharp that a minor mishap can require a trip to A&E.

  • This is all being thrown into focus by the campaign to ban zombie knives and machetes. What difference would this make if you can buy equally deadly kitchen knives? A couple of years ago I was 30 yards from a murder carried out with a machete.     The women I've met over my life are just as into collecting. Just not as often the same stuff as men though things like Pokémon seem to be more collector gender neutral.
