I use the old style Hot Thai Kitchen one as a base because it's so easy and then just vary the amounts based on taste. I am also adding lime leaf sometimes because that was in one of the best ones I had in Thailand.
I still struggle getting a good fried egg.She also just released a new method recipe today with the modern version with more ingredients for the sauce.

Best fried egg I’ve had is smoking goat - think they basically shallow fry it so it’s mad crispy but runny yolk

Shallow fry them in screaming hot oil. Have a pan lid or something to cover the pan once they go in to protect yourself. Cracking the eggs into a little cup before you put them in makes it a smoother/safer process than cracking them on the edge of the hot pan

Nice fried egg 👌. I find a scorching flat bottom wok with a good glug of oil gets them good and crispy with a decent yolk.
