Looks killer - do you follow a recipe ?

The best Thai dish for me, in a stellar field. Ate some bad ones in Thailand too, but when you get a good one it’s unbeatable

I use the old style Hot Thai Kitchen one as a base because it's so easy and then just vary the amounts based on taste. I am also adding lime leaf sometimes because that was in one of the best ones I had in Thailand.
I still struggle getting a good fried egg.

Best fried egg I’ve had is smoking goat - think they basically shallow fry it so it’s mad crispy but runny yolk

Shallow fry them in screaming hot oil. Have a pan lid or something to cover the pan once they go in to protect yourself. Cracking the eggs into a little cup before you put them in makes it a smoother/safer process than cracking them on the edge of the hot pan

I have been schooled, the advanced technique is to do the egg whites first until crispy and then drop in the yolk.

Nice fried egg 👌. I find a scorching flat bottom wok with a good glug of oil gets them good and crispy with a decent yolk.

Just did a cavelo negro pesto thing with two cloves of garlic per person 🤯🧄

Tesco one is good cheers. The supercook one seemed to give me recipes using any of the ingredients I'd entered rather than all of them, suspect I was missing something.

I need to find somewhere that sells crumbly fudge via mail order, which will arrive by Wednesday this week. Any suggestions?
