I think 36 is the minimum I'd want on a gravel bike but if you use a sub compact double then 34 would probably be alright.

In stuff like 7 Serpents and El Piri I'll definitely still want my 30x42T low gearing. I'd event try and squeeze a 46T on with Wolftooth maybe but I haven't tried that yet. Sounds like sticking with 11S GRX is the way to go.

12s road cassettes run up to 34t, and 12s di2 is also 105. Some say you can run 36t cassettes.
