the new increased pad clearance is what I want.
The new GRX brakes are said to have slightly more clearance than the 11 speed generation.
I just replaced my old RX4s with the new GRX and they do seem to be quieter, but I haven't used them in rain yet. -

I am on XT four piston calipers on my R7000 levers on the winter road bike. And that's quieter than my RX4 in same conditions I feel.

If I'm going to strip the Crux and stick Di2 on it, is it worth going to 12S for this kind of improvement? I always figured I'd stick with 11s Di2 so it matches all my other stuff for simplicity but if there's actual improvements worth considering (I don't consider an extra cog enough but if you weigh against cost and availability and future proofing.. )?

11sp motors will eventually die and you'll be scrambling for new parts. Other than that, I really like 11sp GRX

New hoods are very nice and wireless. And pad spacing as previously stated. Extra cog is great if it gives you a bigger gear on the back; not so important if it just reduces steps within current gearing. They’re small but noticeable improvements.

My whole groupset was worn out, wouldn't have changed it just to get the new stuff. It does seem very similar to the 11s GRX, no huge improvements. The mechanical levers are similar. The tiny increase in brakepad clearance is nice, though the old ones were fine too. I think the jockey wheels are bigger, we'll see how long they last. The RD that's meant to be used with 2x is rated to be used with a 36t cassette, so that's a bit more than the stated max used to be. But there's less cassettes available with the about 40 teeth one might want for riding a loaded bike in the mountains. At least for the traditional HG freehub. I don't know if anyone has tried what the actual max might be yet. There are 45t MTB cassettes that would be interesting to try to fit, but that's for the microspline. And I think Rotor had something that could fit. The 2x stuff is made for the HG and 1x for the microspline. But I'm fine with the 36.

12s Di2 means ultegra and that's only a 32t on the back isn't it. Not a huge range. If you want GRX then it's 11s anyway.
You probably want 2x but if not, 11s 1x you can use an XT RD with road shifters -

You can use the new +10% calipers with 11s shifters also. If that's the only benefit.

12s road cassettes run up to 34t, and 12s di2 is also 105. Some say you can run 36t cassettes.

I think 36 is the minimum I'd want on a gravel bike but if you use a sub compact double then 34 would probably be alright.
