I've always been surprised that more people don't do it (that and seatposts/saddles), given how easy it is to unscrew one bolt and snip four cables (if that), or undo one bolt (for seatposts), and how impossible it is to lock these components. Even claris shifters are worth some money, it seems. And hardly anyone is going to pursue these thefts given value of items.
One of the main reasons why I ride fixed exclusively around town since cockpit with beaten up brake levers hopefully won't be worth jack to anyone. Still always expect to come back to my bike to find the seatpost gone, even if the bike's still there.

Yes. That in the past this seems to have happened relatively rarely I've always suspected (as above) that it was just one person doing, and not overdoing, it for years, and I've never heard of anyone being caught for it.
If it's now happening a lot, that suggests the usual patterns with any crime spree, i.e. the perpetrators will either stop again soon or will be caught after a couple of months if the police get a lot of reports of it. Not that I have high hopes of the latter, but it has happened when there's been the same modus operandi over a long time.

Had mine taken from newington green in 2022, and he had a go again in March or so. It's only apex pal, relax.
Luckily came out of the pub in time to stop it the second time, and now have a pub bike

Vaguely noticed someone near the bike across the road from the Railway Tavern on Jude St, he had scarpered by the time I had crossed over. Managed to cut the hoses and take the top cap off. Only saw a big-ish guy in the dark, nothing more distinctive

It's increased circa 10 fold in our customer base, few repeat hits on the same bike.
The other big trend is Bosch e bike battery theft, laughable bad locks on them.

We had 2 Bosch batteries pinched from a cargo bike last year. Some nobhead just pried them off. Poor lad riding it had to get from Brixton to Canning Town with a full load and no assist.

For the past few years I've wrapped my day to day bikes up with electrical tape around the stem and bars. It's not pretty but you really would need a knife to remove it and I figure anything that deters a thief is worth it.

Has happened in hackney, there is a bike minus bars etc outside Morrisons near Stamford hill.
Ball bearings are your friend, superglued in to the bolt holes. Do you ever adjust you bars on the road?
Also noticed around Canada water, and Euston too.
