At £16 it would be rude to say no. Give me an idea if I want/need to spend more. Cheers

So your work surfaces run straight onto cabinets?
-

I'm sorry but are you really saying a knife edge resting in a wooden block is more likely to get damaged than when bearing into a chopping board under pressure while cutting?
If the knife was that flimsy I'd get a different knife
-
• #5657
...and if you're that bothered about a block damaging the cutting edge, why not insert the knives cutting edge upwards?

Bro! You don't use a high quality Japanese knife on a chopping board. You purchase a specific soft cutting board with an elastomer surface.
I know shokunin kishitsu is a big part of Japanese culture. But every now and then I can't help but wonder if they're not actually just excellent salesmen who are very adept at cross-selling.
"Buy our expensive uncomfortable jeans. You'll need a specific detergent. And a spare pair to make sure your first pair don't get too worn. Oh and because they're so savagely stiff they'll wear through at the crotch, but that's fine, we have an after sales repair service for a similar price to a new pair of regular jeans. I've noticed both your jeans are blue. Would you like a different kind of blue to mix it up, this one has a special weave so it will age differently."

fetishism over function.
How dare you make that suggestion. In this thread of all places!

What's the non-wood covering?

Noice.
I have similar for my strop.
Except it's an old leather belt that I glued to some scrap ply...
-
• #5666
Do you think any are big enough to make Wa-Handles and/or handle scales?

I use a similar vertical magnetic stand for my decent knives, though without the leather.
Obv the cheapo ones for my partners use are just chipping each other to bits in a drawer. What's the Nakiri? It looks nice!

I wouldn't care one bit if it were German stainless Henckels or Wusthof knives in a wooden block, because they are built like tanks, blade edge isn't as extreme angle and very rust resistant.
Depends on how much care you take when pulling out and putting in a knife into the knife block.
If you twist the blade, or jab the point into the wood, it might damage the tip or edge.
Not so much because the edge is getting damaged when sitting in the block. Not drying knives properly and putting them into a knife block might cause rust and corrosion too.
If you've spent 30 minutes with whetstones and strop to get a razor sharp edge, I can understand why you might want to protect the edge as best as possible.

There is an upstand that runs up to the cabinets.
Guess I could try using tape to secure a magnetic block on that back wall but might look a bit weird.
I'd not looked at blocks as I've got a random selection of knives and assumed they are more designed for specific sizes/collections.
I've got no fancy blunt/rust as soon as you look at them knives so that's not an issue.

I'd try a magnetic block with commander strips. Worst case you're out £30?
-
• #5671
My f208-1 turned up today. I’ll give it a sharpen as it’s quite dull out of the box. It’s a lot heavier than anything I’ve used before. If I enjoy the shape I can see myself getting a smaller Chinese cleaver but maybe that’s missing the point.

What am I missing? You've got meters of splashback to screw a magnetic knife strip to.
Or has someone forbidden you from doing it?
-
• #5673
I can understand not wanting to drill through the splashback. I had a massive oak block knife rack double sided taped to my splashback for years back when I lived in London.

It’s a Fujiwara Denka

Totally agree, no worries about a stainless western style blade in a slotted knife block.
But a high carbon fine edged Japanese blade is more brittle and prone to rust, and I can see a rough use of these with a knife block could cause damage.
As many as you can feasibly post, subject to everyone who wants some getting some please!
