  • Kitchen is a decent size but walls are all cupboards, shelves, windows, etc so there's nowhere to put one.

    Pondering whether to give one a try.

  • Most of the cupboard doors are pretty thin shaker panels and wouldn't want to trust a load of knives to sticky pads or very short screws. Plus a bit wary of them falling off as you shut the door.

    Admittedly mine was on a wall where cabling didn't allow me to drill but that tape / strip combo I can assure you would be very unlikely to move.

  • You are nicer than me, no need for justification as you are not asking for their first born to be sacrificed.

  • Storage: we have a straight sided vase/jar with some foam in the base, filled with wooden kebab skewers, and then the knives stored vertically.

  • I could do with that tape actually.
    A lot of the magnetic racks are hooked onto screws and they rattle loads and don’t feel secure.

  • Seeing as we’re talking knife storage, I still haven’t got around to making my wall mounted magnetic wooden ones but….

    We were having some work done on the house and there was a quite a few oak off-cuts leftover which I couldn’t bear to see chucked. I remembered how I got ripped off buying the small bit for mine so if anyone wants a piece (or two or…) for free, you are welcome to collect from Tring or postage at cost. Start a list or something…

  • @aggi I may have missed this but what is wrong with a trad knife block?

    A mate has one of these magnetic vertical knife blocks...

    but tbh I think the an old school vertical ones my folks have stores a lot more.

    I think it's the sort of thing you're best off walking into a bricks and mortar John Lewis for.

  • Knife blocks get a bad rep for blunting knives and getting rank inside if you store knives damp and without care.

    Also knife blocks are synonymous with large collections of redundant mediocre knives.

    I probably wouldn’t store a brittle edge Japanese knife or carbon steel knife in a knife block, though Victorinox or German traditional knives would be fine.

    Going off topic here but for my racks I've bought a load of flush fit button-fix attachments for this exact reason...

  • This turned up in the post today. Lovely slim little pocket knife, and my first time with carbon steel. Hopefully won’t be a pain and get all rusty but will get a nice patina from mushroom picking and other foraging.

    It's a kitchen knife. If it's so precious that you can't leave it unwashed for >40 seconds, or store it because it's too fragile it seems like fetishism over function.

  • I’m a chef and use global knives at work as they’re indestructible and it’s work, I got them years ago and see no reason to replace.

    Home my main knife is an IO Shen from a decade ago. I like how thin the blade it.

    I want to try a Chinese cleaver, this will be my first new knife in years so don’t mind spending pennies. CCK seems well regarded.

    Might be worth trying a cheaper knife first to see if you get use out of it.

  • Mine got rusty pretty quickly even though I wasn't carrying it. Maybe with some oil on it would last a bit longer. I also wouldn't trust that mechanism staying closed in a pocket. They are lovely blades though.

  • CCK cleavers seem to be selling for £120, which is outrageous, since they are manufactured as a cheap cleaver and marked up by a cult following.

    Shibazi and Deng also make the same or better quality cleavers, but without the price hike.
    The Shibazi f208 that I linked previously, in spec and finish is better than almost any CCK cleaver.

    Its worth having a smaller cleaver (18-20cm) and a large cleaver (22-23) to see how you get on with both, as if you're used to razer thin light Japanese knives, they will feel unwieldy.

  • Any recommendations for an easy-access, small knife roll?

    Little one is getting very interested in kitchen tools and it's only a matter of time before her curiosity means the sharp knives get pulled out of their case/drawers.

    Longest blade I have is a 19cm chef knife, it doesn't need to be used for travel, just something to keep them tucked away whilst in a drawer that I can then roll out dead easy.

    Edit, or if knife rolls are a crappy solution, any other ideas for safe storage that won't get annoying?

  • Knife rack from Letshandlethis on Instagram. Josh had lots of different woods so could find one that was similar to the table and shelves in our kitchen.
