According to Shimano, the R8000 has more clearance at the same reach. Definitely worth trying before you go on the hunt for a very slightly longer fork (367mm axle to crown is on the short end, forks for short reach brakes can be up to 375mm). You can always send the brakes back if they don't fit.
The problem is not the calipers, it's where they're mounted. BR-6800 will clear a 28mm tyre if the frame/fork is set up to exploit the full 51mm reach. Factory spec is 25mm, which will be at the minimum reach. BR-R8000 takes 28mm tyres according to the same Shimano specification standard.
