Yes - go through the plasterboard and in to the brick. Requires long(er) fixings compared to going straight into masonry.
is there a way to make a channel for cable(s) in the plasterboard or am I better off with a trunking?
Yes - you can just slice out a channel in it (multi tool or similar), put yo' cables in, then back fill over the top. Put a tube in if you think you'll be putting more cables or changing cables later.
If you are really lucky, the dabs might be thick enough to leave a big enough cavity for cables run behind the board, but that's unlikely.
