I'd go for a stainless steel sink bc it doesn't stain, crack or discolour. Our's is corian which is great bc you can just buff out the discolouring
A pullout tap should be the main thing and ensuring it isn't set so far back that water pools on the worktop.
Stainless also has a bit of bounce, so stuff doesn't break as easily if dropped.
I've had a massive butler sink for the last 8 years, and smashed countless pint glasses after they slipped out of my soapy hands.
