It's usually pretty accurate. The pro is always limited avails on launch.
Try something like Currys or JL? They might have a click and collect.
Edit: Looks like currys have stock: https://stock-checker.com/products/iphone-15.html - just depends if there's one local to you.

I’m in London today, trying to order an iPhone 15 pro on the Apple website for collection in London shows no availability- does anyone know if this is true?
As in, might they have them for walk in customers, or have they launched a product with no availability, which seems a bit peculiar?
