Done it a few times and its a really simple job if your careful. I will find where i bought the stuff from later . You will need a iron

Keen to know as I also have a jacket where the seam tape is detaching from the goretex lining.

I recently tried to do this. I bought some stormsure adhesive and ran it over the linings where the seam had fallen off. Lost the seams so it was just adhesive. The storm sure stayed tacky and I ruined the jacket. So don't do that.

If I did it again I'd use a tiny amount of shoe goo and glue some seams back on.

I'd first try using a tea towel and domestic iron to restick the original tape into place. Increase the temp of the iron until you hit the right melt point for the adhesive, and use something like a small block of wood under the ironing board foam cover to apply the heat and pressure directly to the area needed
It's a little tricky to do, the tape often curls at the edge and nailing the melt temp can be annoying - often you think you'd done it, but it's not quite hot enough. Use the tea-towel to hold it in place, or slithers of masking tape to position it down, just don't press the masking tape.
You can buy similar tape on ebay and re-tape it, but it's relatively steep for a small repair - a few quid a metre and usually in 5m rolls.
If you're in London next Wednesday (27th) we'll be doing free repairs at Herne Hill track league, from 17.00 in the clubhouse. Will have seamseal tape if you want to collect some, or we could do it there.

As graham says with the correct stuff and the right temperature plus a helper its quite doable .
The stuff i bought was from point north in cheshire .
https://www.profabrics.co.uk/collections/lifestyle-accessories-waterproofing-seam-sealing/products/seam-sealing-tape-for-3-layer-fabrics
Its 25 mm wide and the smooth white side goes on the coat .
The arcterex is how it looks when new not after 15 years of northern abuse.

Ahhhh good find PaceF8, by-the-metre seems a better way to buy if it's just the collar.

Looking through point north stock they do a nice high viz waterproof fabric that would make a good rucksack cover.

Thanks for advice everyone...does anyone know if there's really any difference between using 3 layer and 2 layer tape.
Also question is when applying new tape, simply go over the top or pull up old stuff and reapply new stuff?

If possible, I’d reapply the original first, then a new wider strip over the top. If the old tape doesn’t fix down, trim the loose section out instead of tearing the whole lot off; the tape might be joined really solidly and tear the jacket membrane
The two-layer is fine, but it’s lighter, and not as nice quality, similar in character to electrical tape rather than textile. I’ve used it a few times for initial mock-up samples, then moved onto the three-layer as sampling progressed to ‘proper’ finish garments.

@Chopsicle clearly has more experience that i do, but I thought I'd just describe two experiences I've had with 5+ years old stuff.
Before you start doing this it's worth considering whether the Gore-Tex is actually still intact.
Despite it "never wearing out" the membranes do wear out especially if run through a high heat dryer and abused with improper care. Especially on the 2 layer stuff.
I've seen cases where speckles of light start shining through 2-layer stuff after years of abuse and I started to see the membrane wearing off from the inside.
I'm not saying to go and throw it out or not try to repair it. This has just been my experience on a 2-layer Rapha jacket and old pair of North face ski bibs. Try as you see fit to fix the seam... but it might be in a death rattle if it's an especially old garment.
Has anyone had much experience repairing seam sealing tape on a jacket? I've got a well used jacket where the tape around the neck is beginning to go.
Suggestion here from Gore Tex (should probably add jacket is not Gore Tex) is to simply reglue but interested to hear whether people have gone down that route, reapplied tape (or simply given up)
