That depends on how lazy you are. I backup my photos to google photos so delete all the photos on my local storage monthly. I have a 64gb 12 Mini, take a shit load of photos and videos of my dogs, consume about 12gb on offline maps alone, have music saved locally and I rarely run out. Just don't keep your entire photo library on there and its plenty. And also don't use all 48 megapixels if you don't need them, and you'll be fine.

I've been waiting to replace my 11 with a 15 (and give my wife my 11 to replace my old 7 she uses).
Only question: is 256GB enough storage? I have an upgraded icloud storage, but my son has just been born so there will be a lot of videos and photos.
