If you've only got one day then then probably the Comares route from the top post gives you the best taste of the area, some sea views and ends with a 15km descent back into town whch will put a smile on your face. You can get lunch in Comares, Riogordo or Colmenar depending on progress and your on quiet roads once you leave the city.
The El Torcal and El Chorro routes are also great (you see Caminito del Rey on the latter) but the latter is quite a bit further, and they both involve a fairly dull/flat 25km back into the city at the end.
