I think around the 100-120bhp range would be a bunch of fun and still fairly lightweight. That's 600 region
1000s are gonna be closer to 200bhp surely
In my very limited experience and non with sports bikes, it's revving and banging through the gears that's fun. Doing that on a litre bike and you're going to be going 100 before you hit 4th

Yamaha YZF750R - 120bhp
Suzuki GSX-R750L - 115bhp
Aprilia RSV Mille - 128bhp
Honda CBR954RR Fireblade - 154bhp (getting a bit spicy there alright)
BMW R1200S - 122bhp
Ducati 900SS - 80bhp (also do like)Newer 1000s have gotten a lot lairier than what was around twenty years ago!
TRX850 actually appeals to me quite a bit too but it seems silly to buy another bike with the same engine I've got in my XTZ...
I'm thinking a lot about buying something sporty... it'll be my first sports bike and to be honest I haven't even ridden anything terribly sporty yet...
I've drawn up a little shortlist of things I like the look of that seem like moderately sensible options:
Yamaha YZF750R
Suzuki GSX-R750L
Aprilia RSV Mille
Honda CBR954RR Fireblade
BMW R1200S (probably an outlier but there's something cool about them)
I suppose I'm really looking at two categories, early 90s 750cc or early 00s 1000cc but I'm just wondering what would be the better choice or should I actually be looking at an early 90s 400cc or early 00s 600cc for a first sports bike?
My XTZ has a 79bhp TRX850 motor and I'm perfectly comfortable with it so I feel like something around the 100-120bhp mark would be a good step?
Thoughts from the sports bike people?
