What are my options?

#tartmode Nitto F-16, cheap generic version from your LBS (if either of those things is still a thing), or roll your own from some stout steel wire

I’ve seen those but they seem like they’d be a bit bouncy.

Then I found this which looks ideal but seems ridiculously expensive (and hard to find).

It’s basically exactly what I had in mind, quite surprised it’s seemingly such a niche thing.

they seem like they’d be a bit bouncy

The traditional bounce snubber was bungees to the mudguard eyes, you could probably go a bit more modern with some paracord to the mid-fork eyelets

How about making your own from second hand carbon bits and pieces? E.g. tt extensions?
