Given that you usually pump new tyres up to a decent pressure when you set them up, I'll go out on a limb and say your old ones were just not pumped up as hard by the time you removed them. No way you'd feel the difference in 3mm all else equal
If I didn't pump my tyres up I'd have been riding around on my rims considering latex tubes.
