I've seen people using the GRX double with 42, 40 also fairly common and works reasonably well without roadlinks or any other bodge. TL;DR GRX double and as big a cassette as you can fit without compromising the shifting too much.
And bog standard 105 R7000 with 11-40t and 50/34t chainset.
The hanger on the Liv Avail is a mite longer than typical hence why it work.
(Couldn’t fit 46/30 anyway due to stupid braze on front mech).
