I moved from Nikon to Fuji when the first X-Pro came out precisely for the size reasons.
Mounting M-mount glass with an adaptor is easy and there’s a selection of adapters available. Voigtlander also makes some nice Fuji-specific glass with contacts - I particularly like the 23mm, quite curious about the forthcoming 27mm.
If you want to keep it small you’re best looking at the f2 ‘Fujicrons’ - they’re sharp and focus quickly and very good glass. Some of the faster glass is also lovely but I felt like I was losing all the size benefits using it.
For my purposes at least the sensor size has been fine. I think @photoben uses it professionally so he’s in a good position to comment.

I ended up grabbing (luckily it turns out) an X-E4 and first-party M-X adaptor on a Spanish second hand app. Currently works well with my existing glass, and the manual-focus aids are nice.
How do folks rate the Fuji 18-55 2.8/4? Comparing it with the Sigma equivalent for a leave-it-on-lens for when I'm chasing the young 'un around and need autofocus.
Looking to jump back into digital after a while out ... I'm leaving my ageing Nikon F-mount stuff behind and considering something new in the enthusiast category, so around €1000-€1500 for body and a decent prime or fixed aperture zoom.
More than anything, size is my deciding factor ... I don't carry my D700 with me as it is far too big. I'm interested in the Fuji X system but wary of the smaller sensor size. Any good?
Also, I have zero interest in video, so stills-focused bodies/features only.
Also also, if it can take M-mount lenses via an adaptor all the better, as I have some nice Voigtlander lenses for my Leica M6 that I'd love to use.
