Marinated tofu, the one in the picture was tasty but a bit dry. I did another where I made a marinade with blended pineapple (leftover from the grilled bits), coriander, lime, soy, sriracha, miso paste, garlic, pepper and a few other bits and just kept coating the tofu while it was cooking. The skewers are pepper, mushroom (boiled first) onion and a chunk of pineapple, also covered in the coriander marinade.
On the plate photo is potato salad, seasoned cucumber, sauerkraut skewer, grilled pineapple and pepper. Would of liked to have a couple more bits, ie sweetcorn, courgette. And I didn’t have time to do any sweet potatoes!
