How MTB-ey do you want to get?
R7000 RD can handle 11-40t and you can get a wolf tooth extension if concerned or wanting to go a little bigger. -

We are very hilly around here in Stroud, so if I could go bigger than a 40 that would be good. Though I could go small on the chain ring I guess. They won’t be going fast, but want to explore the off road stuff around here.

Happy to be corrected, as far as I know, road to mtb isn't going to work without a cable pull converter. Be cheaper to get a MTB shifter.

Thanks. Thought as much. I guess a GRX would go up to 42, so that’s an option.
I have picked up a cheap Shimano RS700 Flat Bar Rapidfire Shifter as I’m building up a 1x On One Inbred 26er for my youngest.
Can I use any 11 speed derailleur with this shifter? Ideally I want to give them MTB gearing.
