• No recipe as such, just made up to go with the lamb at the last minute. This was just

    Couple of tins of chickpeas (drained)
    Tin of chopped tomatoes
    Tin of coconut milk
    Couple of shallots
    Spice mix ( I think I used a tsp of ground cumin, coriander and garam masala and ½ a tsp of turmeric, there might have been more but I kept it mild so the kids could eat it)
    Chopped ginger
    Salt and pepper to taste

    Fry the shallots in oil then chuck the spices and ginger in when they've sweated down, cook for a minute then add the coconut and tomatoes, bring to the boil then add the chickpeas and simmer with the lid on untill you get the consistency you prefer. This took about 45 minutes to thicken up to how I wanted it. Chuck a load of fresh coriander in at the end.

    The lamb was pretty hot so this was a nice contrast.
