Not Luton but I paid less once for valet parking (drop off in short stay car park) than I had booking months in advance on a different trip and parking far enough away that the courtesy bus took 20 minutes to get to the terminal.
The hedge is looking at the cancellation terms, if it's possible to do so then book well in advance and then see if it's cheaper to cancel that one at the last possible moment if there's a better deal elsewhere.
