I really should bring a bike on my next East Anglia trip, looks like some nice riding.
As regards needing a road bike? If you use it, have space to store it, enjoy riding it, then keep it, if not, then move it on. It's just a bike, can always be replaced (I know this from many many experiences).

Once you get off the main roads it is pretty deserted in these parts, it’s well worth bringing a bike for sure.
The problem is I have the space, but stuff is bringing me down and working out what to lose is also a major stress.

Destuffing is very therapeutic, use the 6 month rule, not touched/used/missed summat for 6 months then it's fine to be without it.
