The original plan was one steam, one normal.

But it's still too much oven space for our needs.

Current thinking is single 60x60 steam oven, and a combi 60x45.

That's a great choice IMO. Are you planning on a stack or a side by side install, with say a vacuum or warmer drawer?

Stacked - combi on top.

I'm not sure if I should be embarrassed when I say that I don't know what a vacuum drawer is. Do I need one?
