It's a lot flatter if you go further south.
I've ridden some of the same roads you're on but during Transiberica where I'm picking roads for speed, not niceness. Can't really comment on any of that other than Spain is much nicer to ride in than UK so you don't need to be as wary about finding yourself on bigger roads - they often have big shoulders and the drivers aren't pricks like here.

In some spots, like 216km you have gravel shortcut rather than road. Is this intentional? I'd not do that if I was looking for speed - it's normally less drama and faster to stay on the road, even if the distance is higher.
254k too, eg 25% gravel climb rather than using the road
398km you're going through a tunnel marked "no bikes"
475km stick to bigger road, same with 515km unless you want the town?

Don't miss going through Montserrat it's worth the climb.
The climb to Bonaigua (highest point on your route) is nice. You get some dickhead sports cars in summer but nice. The valley after is fine, if a bit tight in spots.
Also the routes kinda direct and missing a lot of stuff, but maybe that's the point. Could look at Transpyrenees routes for some inspiration.
Pulled together a route for the Biarritz to Barcelona trip.
It's longer and has much more climbing than I'd like, but it hopefully avoids death-tunnels and motorways.
If anyone wants to cast a critical eye over it to check if I've made any major errors, that would be fantastic!
