Belling, cheapest 90cm oven with induction we could find! It clicks a bit but seems pretty good so far, obviously the handles/knobs aren’t as chic as some, but it was significantly cheaper.

The plaster/paint will get filthy as all the hot grease is pulled past and onto it from the pull of the extractor.
Tiles will be easier to clean thats why they're used -

If you like the clean look then do it with clear glass, paint the back the same colour as the wall. But do go up to the extractor, that's a really messy area and it will look rough really quickly.

We inherited this kitchen and I would never have thought of/chosen the glass but it has never bothered me and never stays dirty after cooking. Old place had subway tiles and the grout was stained and generally looked much worse.
It won't get featured on insta but it works.

Google search for 'painted glass splashback' brings of lot of results. The glass should be the white or crystal type unless you want a green tinge. You make a template with cutouts for sockets etc. get the glass cut and then tempered, paint the back then add sticky backed mirror to the back of the paint. Stick it on the wall with mirror glue.

I guess you could have acid etched. I don't mind the look, it's practical. There's always mirror instead and aged mirror is quite nice too.

It's on the architectural plans agreed by building control and the fire engineer so I'd hope so!
We wouldn't be allowed to put in curtains or combustible blinds.
I don't know if the fact it's an induction hob rather than something spitting out flames makes a difference?
