for what is essentially 'construction timber' the douglas fir has a really nice look to it, would look quite ropey if it was just pine and imagine on a project of that size not as expensive as sapele/walnut/london plane etc.
is it having just a minimal oiled finish?

Yup - we looked at Osmo and it gave it a slightly odd colour so have gone for something else which I forget the name of!
