Any brake that is sufficient to lock up your wheels without requiring the grip strength of a gorilla is good enough
To a point, when I've had cable discs in the past they've been fine, I can stop without too many issues better than a lot of bikes, but when you're smashing it down unsuitable paths with a week's worth of shit strapped to your bike it's easy to brake from the hoods with little effort with hydros compared to getting achey hands from squeezing hard or using the drops for more leverage when I don't want to with cables, that adds up after a few days and my hands and wrists are bad already, plus I don't need to dial the pads in ever.
Any brake that is sufficient to lock up your wheels without requiring the grip strength of a gorilla is good enough. It doesn't matter how beefy or expensive the caliper is, tyre traction is nearly always the limiting factor in your brake power
