Not really gravel specific but - does anybody know who could do this sort of custom anodising for son dynamo hub?

Son does custom ano jobs if you ask nicely
-

Really???
I've asked them about the orange one but for thru axle and 32h - they have this colour in qr but not in thru axle but they've replied that nahh they can't do it.
Is there some other contact than general support?
-

you may need to have an OEM/Industry contact, or order in certain volume but they've done custom ano and engraving for folks. I have a custom engraved Peter White Son hub for example, and I know Peter has gotten custom ano in the past. Perhaps find out who your local distributor is and ask what they can do?

I'll keep that in mind, thanks. This is amazing.

My mind can't contemplate spending all that money and having cable discs

They're Paul Klampers though, and by all accounts just as good as hydros.
I'd like a pair, but not at £220 each.

just as good as hydros
Lies.
£220 each
Expensive lies.

I’ve got sram force hydraulic brakes on my “performance” bike and paul klampers on my “slow” bike. Those mechanic ones brake just as good if not better than hydraulics.

SRAM doesn't count.

TBF I've never tried them, just seems impossible.

It's a spectrum, right?
After the shit show that was Apex 1 hydraulic the BB7s that replaced them feel positively reliable and direct.
No comparison to Shimano 4 pot SLX tho.
