That sounds banging actually. I love aubergine but I'm so shit at cooking it. Always ends up as either a flavourless and sponge textured or oily and phlegmy.
Someone here suggested microwaving it before cooking which I've started doing with great success. Especially good when you want quick aubergine curries. Also uses less oil.
Unfortunately I have other commitments so can't travel to Southall or the Med to buy my aubergines.
Bake the tasty fuckers whole, no need to worry about oil drinkage, scoop out the inside and whizz it up with tahini and lemon and garlic.
