A million years ago I started making a pairing knife from a kit I brought back from the US and wood from a cherry tree I felled(?) when I was younger.
New year' resolution is to start trying to do more hobbies/activities to make myself happier. So last night I made a bit of progress:

The tricky bit is I need to shape the bolster*(?) bit of the scales off the knife as the blade is in the way. Which means lots of taking on and off.
Also I've (probably stupidly) shaped it with compound curves so getting it to match is tricky. But I wanted it looking sort of organic and pistol-grip-like. Also you can't really see the grain but the wood is a pizza slice our of a trunk ring so the grain is smallest at the top speeding down the handle.
At the moment it's about 5mm too wide at the bolster section.

It's looking great so far. It might be a 'stupid' design if you wanted to sell them and make money, but as it's a hobby and just for you then why not take the time! I often have to remind myself with DIY projects that I am doing it for fun and therefore I should just slow down and enjoy the process and challenge rather than trying to get it done quickly.

Cheers. 4yrs and counting... so it's mos def not a commercial enterprise!
Also I think I've mentioned this before, but if anyone is thinking of making a handle /scales I'd recommend buying flat ones, or finding someone / a power tool to make them flat on both sides. I made mine with the hand tools I had, and it's been a real hurdle.

Did a bit of work on evening up the scale widths.
I've encountered an issue with my design:
My current scales go up past where the knife tapers in. This creates a slight gap at the top of the handle. From a practical perspective it will be filled by the liners and epoxy but as the liners compress a bit visually you'll see it flare out - you can almost see this already.
I don't really want to loose the bolster section, but is profiling the inside of the scale to match the taper going to be achievable?

I think a leatherman is a good shout.
When I used to enjoy la belle vie I'd have one of those Stanley mini key chain tape measures and an opinel no8. Might not make for the most gifty gift tho.

This really annoys me. I'm trying to be subtle cleaning my sharp af knifes, but I still manage to cut up my sponges all the time. Do you people have any tips or is this inevitable?

I wash one side of the blade at a time and always towards the edge.
And I use a brush rather than a sponge.
I bought the 8" version of this and am a fan. Nicely balanced and sharper than any knife I've used bar the Opinel penknife I bought in France years ago. Ta for the recommendation.
