From your picture, you have removed the 'plaster' from approx 1/4 of the wall.
Are you intending to strip the whole wall back to stone?
Is it likely the remainder is cementitious and more stongly adhered than the real plaster?
(If you tap it, it should sound more solid).
2J or 8J spread across a spade chisel will not be enough force to induce a crack between the stone and the cemplaster to remove plate size lumps at a time.
A reduced power SDS + scutch will remove it, but eventually.
