Almost identical here. I feel your pain.
Got my first dose Christmas last year and have had it twice more plus a series of other passing illnesses and have never got back to fitness. I was never ill before, now it seems like once a month I get something that lasts a couple of days and sets me back again. I can never seem to get enough energy into me to do anything much.
There’s now a nagging doubt that I’ll ever be fully better again which gets me down oh and the fact I’ve gone from 66kg to 75kg.

I hear ya.
At least this time round I know its possible to get back to full fitness. I've done it before and I'll do it again. Or at least I'll try as hard. Who knows, maybe this infection won't have the same long term effects anyway.
Small steps as part of a proper routine gets you there or close as you can be...you'll get there.
It has been 18+ months since I had a vaccine dose. I wish I was eligible for another one.
I'm feeling heartbroken at the moment. I was the fittest I'd ever been in Feb this year. First dose of COVID took me from running 15mi easily down to barely managing 3 miles. Clawed it back despite a second mild infection. Managed my first 15miler since Feb only three weeks ago. Finally felt like I had recovered. Here I am with it for the third time, just as sick as my first dose.
