Ah motor might be crushing cable = shift issues abound. Normally you have to grind a bit off bottom of Bullitt frame to fit a bafang, hopefully they haven't jammed cable in same place OR, motors tend to slide around and rest against frame in one direction or another, so under load motor has moved a tiny bit and pinched the cable.
All in sounds like the new boy has not done a great job at that shop. However, as a bike shop guy also, its basically impossible to find a Number 2 who is as attentive/tries to do a decent honest job, and sometimes you just really need a day or more off and not possible to sanity check every single thing they do before it goes out the door even though you'd like to. So yeah, fix the issues you can then get back to them when he's back off holiday.
